Bacon Corn Chowder

Bacon and wine add extra flavor and smokiness to this hearty chowder.

What I like about this chowder is that you can make it smooth and creamy, or pulse the vegetables so you have more texture to this chowder. The choice is yours!

There’s no bad ingredients, no chemicals, just nice healthy eating. You can whip up this chowder in no time at all!

Note: You 1/2 c. diced ham in place of bacon for a slightly different version of this tasty chowder. It’s also a great way to use up ham that you may have leftover.

  • 1/3 c. Diced cooked bacon
  • 1 1/2 dried corn
  • 1 c. dried potatoes
  • 1/4 c. dried onions
  • 1/4 c. dried Celery
  • 1/4 c. dried Carrot
  • 1 t. garlic powder
  • 1 t. dried parsley
  • 1 1/2 t. salt
  • 1/2 t. ground black pepper
  • 1 Bay leaf
  • 8 cups chicken broth (or water plus bouillon for 8 cups of water)
  • 1/2 c. beer or white wine
  • Cook bacon in a 4 quart saucepan over medium-high heat until crisp; remove bacon and drain on paper towels, reserving 2 Tbsp drippings in pan.
  • In food processor, add corn, potatoes, dried onions, dried celery and dried carrots. Pulse if you want a textured chowder or process until fine if you want a smooth chowder.
  • Add contents of food processor into the saucepan, stirring until vegetables are coated with bacon drippings.
  • Add garlic powder, parsley, salt, ground black pepper, and bay leaf. Stir in broth and wine. Bring to a boil, cover, reduce heat and simmer 30-45 minutes or until vegetable are hydrated. Remove from heat and cool slightly. Remove and discard bay leaf.
  • Stir in bacon (or ham, if using). Bring to a simmer; Cook 1 to 2 minutes more or until thoroughly heated.

Celery is currently out of stock as of the writing of this recipe, however, check the vegetable section….we will get it back in stock. Carrots were out when I needed them, so I ordered elsewhere and now they are back in stock! It happens!

If you want to start this early, you can easily cook the bacon in the Ninja Possible Cooker. Remove the bacon and add your soup mixture and continue the recipe. Then slow simmer this chowder, after you bring it to a boil.
