Ingredients:
- 1 cup freeze-dried shrimp
- 1/3 cup freeze-dried onion
- 1/4 cup freeze-dried celery
- 1/3 cup freeze-dried bell pepper
- 2 cloves freeze-dried garlic
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp tomato paste
- 1 tsp Cajun seasoning
- 1 tsp sugar
- 1 cup chicken or vegetable broth (or bouillon + water)
- 1 tbsp olive oil
- Salt & pepper, to taste
- Cooked rice (white or brown)
Instructions:
- Rehydrate shrimp and vegetables in warm water.
- In a saucepan, heat oil and sauté rehydrated veggies and garlic until fragrant.
- Stir in tomato paste, diced tomatoes, seasoning, and broth. Simmer 10 minutes.
- Add shrimp and cook 5 more minutes.
- Serve over rice.
