I never used to like waffles much. They were so plain. Kind of boxy and uninteresting. Maybe it was the waffle maker I was using. But I was never really a fan of plain waffles.
But now, everything has changed. You could say I had an epiphany. A sighting, if you will. One night we were watching the Food Network. I just love the Food Network! On the show we were watching, they were featuring food from around the country. That is when I discovered the bubble waffle. They looked delicious! And oh so tasty! But how do you make this tasty treat? I had to investigate!
Bubble waffles can be served for breakfast. Or as a dessert. Or any time of day that you are hungry. They are a welcome surprise to an ordinary day. They make the ordinary well……special!

They are soft and pillowy on the inside and can be a little crunchy on the outside. The longer you cook them, the crunchier they are. It tastes like a waffle cone meet a waffle. Soft and pillowy, but crunchy too! Oh what a delight!

You can dip the waffle in syrup. Or top them with strawberries or other fruits. Or maybe add ice cream, caramel, or fudge. Top with sprinkles or candies. There are no rules to bubble waffles. Well, wait, that’s not completely true. There is one rule. You need to have a bubble waffle maker.
Here is the one I bought.
Anyhow, once you have your bubble waffle maker, you are good to go and you can start enjoying this deliciously simple treat.

Perfect Bubble Waffles Recipe
Makes approximately 5 waffles
- 3 Egg Yolks
- 3/4 c. Milk
- 1 T. vanilla extract
- 6 T. unsalted butter
- 3/4 c. sugar
- 1 1/4 C. Cake Flour
- 1 1/2 t baking powder
- Pinch of freshly grated nutmeg
- 1/8 t. Salt
- 6 Egg whites, beaten to medium peaks
In a bowl, whisk together egg yolks, milk, vanilla, butter, and sugar until combined. In a large bowl sift together the flour, baking powder, nutmeg and salt. Whisk in the egg yolk mixture into the flour mixture until well combined and no lumps remain. Add one-third of the egg whites into the batter and stir until lightened. Gently fold egg whites in 2 more additions.
Pre-heat the iron and pour the batter evenly over the bottom plate. A soup ladle works well for this. Use an offset spatula or a silicone utensil to evenly distribute the batter.
Bake for 3-5 minutes until the waffle turns golden brown, flipping the waffle maker half way through to help fill the other side as well.
Enjoy this tasty treat! Once you have one, you will be hooked! I don’t know why these bubble waffles aren’t everywhere by now. Totally delicious!
